La Bourdasso: Italian Flavors in the Heart of the Corbières

Twenty minutes from Carcassonne, in the village of Pradelles-en-Val, La Bourdasso occupies a former wine estate transformed in 2014. The main dining room is set within the old cellar, its concrete and stone vats still visible, while the terrace overlooks the enchanting landscapes of the Corbières. It is a place where the spirit of the countryside and Mediterranean hospitality meet.

The restaurant is the work of the Antonini family, whose commitment to authenticity shapes every plate. Their cuisine is Italian at its core, yet deeply rooted in the local terroir. The kitchen produces its own artisan mozzarella from the milk of water buffalo raised on the family farm, just beyond the village. Fresh pasta, house-baked bread, vegetables from the potager, and meats from the farm all feature on a menu that balances tradition with quiet innovation. Each dish is a direct expression of the family’s dedication to ingredient quality and gastronomic integrity.

The farm, run by Edoardo Antonini, is an integral part of the experience. Visitors can explore the dairy, learn about buffalo milk production, and taste the celebrated mozzarella di bufala that has become the restaurant’s signature. Since 2020, the family has also begun vinifying grapes from the estate, adding a new dimension to their offering.

La Bourdasso is more than a restaurant. It is a gathering place for the community, hosting private celebrations, weddings, and an annual anniversary party each mid-November. A planned boutique hotel of 16 rooms, with a spa and wellness spaces, is set to open in 2027. For now, the restaurant serves dinner from Wednesday to Sunday, and lunch on weekends. A food truck, Le Petit Bourdasso, is also planned for summer 2026.

The restaurant’s recognition by the Michelin guide as Recommended reflects the quality and sincerity of what the Antonini family has built here. In a setting that feels both rustic and refined, La Bourdasso offers a genuine taste of Italian cuisine, shaped by the land of the Corbières.

Cucina italiana in the land of cassoulet ??? Such is the impossible feat that Cinzia and Fabio Antonini have been pulling off for over a decade now. The duo left behind their careers as interior designers in Rome in order to renovate an old wine storehouse located just a stone’s throw from Carcassonne. And they made sure to bring the transalpine slow food movement from their former lives along with them, mastering the art of locally-sourced fare: the couple produces their own wine, while their bambini handle the rare eats – like Edoardo, who raises buffalo and makes the only artisan mozzarella in Corbières, and Giacomo, who works his magic in the kitchen! The day we visited, lunch felt like a proper Sunday feast: comforting smoked scamorza croquettes; delicate guinea fowl thigh stuffed with salami, served with a creamy sweet potato purée and sautéed endives – unless you felt like opting instead for the butternut squash, taleggio and parsley risotto, or the sea bream fillet with herbs and sautéed Chinese cabbage; and to ensure you need to take a nap afterwards, there’s classici tiramisu, panna cotta or affogato with farm-fresh ice cream produced just down the road. // Megan Linar
