Just south of the medieval citadel of Carcassonne, chef Franck Putelat has built a world of his own. Since 2006, his restaurant has drawn guests from across the region and beyond, earning two Michelin stars for its precise, generous, and deeply sincere cooking.
Putelat’s philosophy is built on a triptych: sincerity, precision, and generosity. A Bocuse d’Argent winner in 2003 and a Meilleur Ouvrier de France since 2019, he fuses the terroir of the Aude with the great French gastronomic tradition. The result is a modern cuisine that feels both rooted and adventurous—a continuous search for new flavours while letting the region’s finest products shine.
The dining room, designed down to the last detail, offers an atmosphere of calm sophistication. For those seeking something more immersive, the Chef’s Table—a private space for four to eight guests with a view into the kitchen—allows the cooks to serve and present their creations directly. It is an experience that brings the energy and precision of the pass to the table.
Signature dishes have made Putelat’s name essential in haute cuisine, and the menu evolves with the seasons, always reflective of the chef’s restless creativity.
