The story
Just outside Carcassonne, in the quiet village of Pezens, L’Ambrosia is the project of Valérie and Sébastien Aliprandi. Since taking over the restaurant in 2016, the couple—originally from Alsace and Lorraine—have built a destination for modern cuisine that has earned a Michelin recommendation.
Chef Sébastien Aliprandi brings more than twenty years of gastronomic experience to the stove. He became a Maître Restaurateur in 2017, a certification that signals his commitment to cooking from scratch with fresh, seasonal ingredients. His style is described as “épurée, sans complexe”—clean and uncomplicated, with the product itself taking centre stage. He works with short supply chains, sourcing from local producers and passionate vintners he has met across the Aude region. The result is a cuisine of audacious, sometimes surprising pairings that remain, as he puts it, always controlled.
Valérie Aliprandi runs the front of house with professionalism and discretion, making guests feel at home while guiding them through the menu. She has built a wine list of over 140 references, selected over time, and takes particular pleasure in breaking conventions with her food-and-wine pairings.
The dining room offers a setting where relaxation and conviviality meet, with outdoor seating available in warmer months. The restaurant is wheelchair accessible and welcomes private parties. L’Ambrosia is open for lunch and dinner from Thursday to Saturday, and for Sunday lunch.
With its focus on product-driven modern cuisine and the quiet confidence that comes from years of experience, L’Ambrosia has become a recognised address in the Carcassonne area—one that rewards the short drive from the city.
