The story
Since 2016, Le Moulin de Trèbes has occupied a historic watermill on the banks of the Canal du Midi, just minutes from Carcassonne. The restaurant’s philosophy is summed up in its motto: “Simply our cuisine.” There is no pretension here—only a commitment to local, seasonal ingredients and a warm, unhurried atmosphere.
The team describes the setting as a place of “unique charm and peaceful atmosphere.” Inside the old mill, diners find a convivial space where the architecture itself tells a story. The restaurant’s modern cuisine is built on a foundation of products from the Aude region and beyond, with a menu that changes regularly to reflect what is best at the moment.
From the à la carte, starters might include house-made foie gras with exotic fruit chutney or gravlax of Scottish salmon with beetroot and vegetable pickles. Main courses feature local specialties like black pork from Bigorre, roasted fish of the day with green lentils from Lauragais, or a lightly smoked beef fillet with a crispy potato galette. Desserts range from a classic bitter chocolate fondant with yuzu jam and Espelette pepper to a millefeuille with speculoos cream.
For those who prefer a set menu, the “menu du marché” is offered at lunch Tuesday through Friday. It changes weekly, based on arrivals and the season, and is a showcase for the kitchen’s direct, balanced style. The wine list focuses on the Languedoc-Roussillon region, with a selection of reds, whites, and rosés from local estates.
Le Moulin de Trèbes has earned a Michelin Recommended distinction, a recognition that aligns with its dedication to quality and authenticity. The restaurant is open for lunch and dinner, with hours that vary by season, and offers parking nearby.
