Since 2007, the restaurant has held a Michelin star, a consistent mark of the high-quality cooking that chef Jean-Marc Boyer brings to this corner of the Montagne Noire, just 12 km from Carcassonne.
Jean-Marc Boyer is a native of the south of France. His career began at Le Réverbère in Narbonne (two Michelin stars), then took him to Paris for over twenty years. He worked alongside Bernard Pacaud at the three-star L’Ambroisie on the Place des Vosges, spent time at the Ritz on Place Vendôme, and completed stages with legends like Loiseau, Lasserre, and Pierre Gagnaire. In 2003, he left Paris to settle in Lastours, opening Le Puits du Trésor and quickly earning the Michelin star that has remained ever since.
Boyer’s cooking is described as “simplicity with an exceptional fragrance,” grounded in a concern for natural food and gustatory precision. He works primarily with local producers, sourcing meats, poultry, vegetables, fruits, and herbs that are raised, cultivated, or foraged in the surrounding region. This alliance of authenticity and quality allows him to give free rein to his inventiveness, following the rhythm of the seasons. The result is modern cuisine that feels both inventive and deeply rooted.
