There is no rigid menu at Itsasoa. Instead, the kitchen offers two tasting journeys. The Menu Hegoa is a three-sequence affair available at lunch and dinner, with a vegetarian option. The Menu Itsasoa unfolds over five or seven sequences, showcasing the full range of the kitchen's creativity.
Typical dishes might include line-caught thonine grilled with courgettes and herb yoghurt, or petit-bateau monkfish with a creamy pea purée, raspberries, and toasted almond sauce. For the longer menu, a blue lobster appears, served warm with cherries and a crab jus. Desserts, too, are built around what's in season — Saint-Goustan strawberries appear in multiple forms, while rhubarb is confited with lemon cream and an herbaceous sorbet.
Both menus offer a cheese supplement from Kérouzine, and all are subject to change based on the catch of the day.
For a more casual lunch, the Menu Chistera changes weekly and is available Monday through Saturday. At just €28 for a full three-course meal, it's an accessible entry point into the restaurant's kitchen. Expect dishes like udon noodles in dashi with spring leeks, or a duck leg with purée and chimichurri. The format is simple but the sourcing is the same — every product is selected with "amour et soin."
Itsasoa is closed Wednesday and Thursday, with reduced hours in winter. Whether you come for the full tasting menu or the midweek bistro lunch, the message is the same: nature decides, and the kitchen listens.
