The story
In the heart of the picturesque village of Gigondas, L’Oustalet is a place imagined by the Perrin family — fifth-generation vintners of the legendary Château de Beaucastel in Châteauneuf-du-Pape. This Provencal haven is designed to offer a true experience of the region’s gastronomy, wine, and art de vivre.
The restaurant’s kitchen is led by Chef Thomas Boirel, who signs a sensitive, current cuisine with a pronounced vegetal imprint. Each creation is born from close dialogue with committed local producers, respecting the living world and the natural rhythm of the seasons. Spring at L’Oustalet means dishes that balance land and sea with finesse: spring vegetables, wild herbs, Mediterranean fish and shellfish compose plates that are balanced, sincere, and delicate.
The menus are conceived as journeys, where each dish fits into an overall harmony. The lunch menu offers a two-course or three-course discovery of Provencal terroir, available Tuesday through Friday. The full Oustalet menu — three or five courses — invites guests to let themselves be guided through an attentive tasting experience, available for both lunch and dinner Wednesday through Saturday.
The property also includes Le Bistrot de l'Oustalet (currently closed for the season), a wine bar and cave called Nez!, and several guest rooms, all set in the enchanting surroundings of Gigondas. The restaurant’s recognition by the Michelin guide, with a Recommended distinction, reflects the consistent quality and authenticity of the experience.
