The story
L’Oustalet sits in the picturesque village of Gigondas, a place imagined by the Perrin family — fifth-generation owners of the legendary Château de Beaucastel in Châteauneuf-du-Pape. This haven was designed to offer guests a true Provencal experience, centred on gastronomy, wine, and the local art of living.
Chef Thomas Boirel leads the kitchen with a sensitive, current style marked by a strong vegetable presence. His cooking emerges from close dialogue with local, committed producers, following the natural rhythm of the seasons. The spring menu reflects this: a delicate balance between land and sea, with spring vegetables, wild herbs, and Mediterranean fish and shellfish composing sincere, refined plates.
The restaurant offers two tasting paths. The lunch menu (two or three courses, Tuesday to Friday) is an introduction to the Provencal terroir. The more extensive tasting menu (three or five courses, lunch and dinner, Wednesday to Saturday) is designed as a carefully guided experience, where each dish contributes to a harmonious whole.
This commitment to high-quality, seasonal cooking earned L’Oustalet a Michelin star — recognition of a kitchen that respects both tradition and the living landscape of Provence.
