Since 2005, L’Amphitryon has been a fixture in Castillon-du-Gard, its kitchen guided by the same steady hand: Chef Stéphane Goudet. In November 2025, Goudet took over the management, renewing his commitment to making the restaurant a place of sharing and emotion. The Michelin guide has taken note, awarding it a “Recommended” distinction in 2026—a recognition of the consistency and care that define the house.

The Team Behind the Experience

Around Goudet, a dedicated team ensures every detail is right. Steeve, the attentive head waiter, orchestrates the dining room alongside Samantha and Sarah. In the kitchen, the chef is supported daily by Romaric and Yan. The atmosphere is one of genuine hospitality, where respect for the product, the guest, and the team is the guiding principle.

A Seasonal, Local Approach

The cuisine at L’Amphitryon is rooted in the best of the region. The menu changes with the seasons, driven by inspiration, curiosity, and instinct. Nothing is fixed—the cooking renews itself constantly, with the guest’s pleasure at the heart of every plate. Ingredients are sourced from trusted local partners: cheese from Le Comptoir Méditerranéen in Bellegarde, bread from Claude the baker in Nîmes, meat from Agostini and Languedoc Lozère Viande, fish from Mericq, and fruits and vegetables from Valentin Goisbault.

What to Expect on the Menu

The spring menu, for example, features a truffle-focused option at €125, with dishes like a marbled foie gras sphere with truffle and black garlic coulis, scallops marinated in melano truffle, and a choice of cod infused with truffle or Lozère veal fillet rubbed with truffle. For weekday lunches, more accessible menus are available at €80 and €105. The wine list highlights regional crus, especially from the Rhône Valley, with Steeve on hand to guide pairings.
