Just off the banks of the Agout, on Boulevard Raymond Vittoz in Castres, La Part des Anges serves a modern cuisine that is both generous and precisely executed. The restaurant, recommended by the Guide Michelin, earned its recognition through a dedication to fresh, seasonal produce and creativity that never overwhelms the plate.

Chef Cédric sources his ingredients from small local producers, letting the Tarn's larder do much of the talking. The cooking is described as “cuisine du marché” – market-driven – and changes with the season. Photographs of the dishes reveal a refined, artful hand: foie gras escalope with marinated girolles and orange reduction, fillet of rascasse on crispy skin with a bouillabaisse-scented broth, and a “snickers” dessert deconstructed with caramel and fleur de sel.

Lunch is available in several streamlined formulas, from a two-course offering at €19 up to a three-course menu with wine. The evening menu “Confiance” (Trust), at €39, allows guests to choose from a short, compelling à la carte: ajo blanco with squid and white-grape sorbet, beef carpaccio with Parmesan sablé and a coffee–pepper gel, or grilled onglet with mushroom ravioli and truffle sauce. A vegetarian option – creamy polenta with roasted vegetables and Parmesan emulsion – is equally well considered.

The wine list and beverage menu are set apart, and the interior is elegant yet welcoming. On warm days, outdoor seating spills onto the boulevard. Service is attentive, precise – what you'd expect from a Michelin-recommended address.
