The story
Since 1921, Maison Lameloise has been a fixture in the small village of Chagny, housed in a former coaching inn along the historic route between Paris and the Mediterranean. For three generations, the Lameloise family—Pierre, Jean, and Jacques—built a reputation for generous hospitality and exceptional cooking. That story continues today under Chef Eric Pras and Frédéric Lamy.
In 2008, Chef Eric Pras, a Meilleur Ouvrier de France (2004) who had been the right hand of Régis Marcon, joined Jacques Lameloise in the kitchen. By 2009, Jacques had passed the torch completely. Pras’s modern cuisine quickly won over longtime regulars and new guests alike, proving that the house motto—La tradition, c’est innover (tradition is to innovate)—was in safe hands. Frédéric Lamy, a Chagny native and graduate of the Lausanne Hotel School who trained under Paul Bocuse, returned to lead the business with a deep personal commitment to the place.
The restaurant’s three Michelin stars, awarded for exceptional cuisine, are a testament to the precision and creativity of Pras’s work. His cooking is rooted in the bounty of Burgundy but looks forward, balancing classic technique with contemporary expression. The atmosphere in the dining room is one of quiet elegance, a setting that invites guests to slow down and savour the meal.
Maison Lameloise also offers a four-star hotel, making it a natural stop for those exploring the vineyards and villages of the Côte de Beaune. The restaurant serves lunch and dinner, with an interesting wine list that reflects the region. For a taste of the chef’s philosophy at home, Pras has published a book of thirty recipes from the restaurant, designed to make his cooking accessible. “Cuisine is about sharing and the desire to please,” he says.
