The story
In the small town of La Garnache, between Noirmoutier and Nantes, Magali and David Bourmaud run Le Petit Saint Thomas. The couple met in hotel school and, after honing their craft from Normandy to the Côte d’Azur, returned to their native region to take over this address in 2001. Their philosophy is straightforward: work with good, beautiful products and pair them with a warm, professional welcome.
The kitchen here is rooted in the Vendée terroir. Le Petit Saint Thomas is certified Maître Restaurateur and holds a Michelin Bib Gourmand recommendation, a recognition that underscores its commitment to quality and value. The team sources ingredients in short circuits, favouring local producers: organic market gardeners, foragers, regional breeders and fishermen. Everything is made from scratch on site, with a focus on raw, seasonal ingredients. Dishes like the Croustillant de cochon bio aux langoustines or the Agneau bio de Freddy (lamb from a named local farmer) show this connection to the land.
The modern cuisine at Le Petit Saint Thomas is expressed through several set menus and an à la carte. The Menu Maraîchin (50€) might offer a gaspacho of asparagus with a soft egg and dried duck, followed by line-caught sea bass with vegetables and a shellfish jus. For a more indulgent experience, the Menu Veau Langoustine (67€) pairs rosé veal with sweetbreads and langoustines, finished with a pavlova of red fruits and hibiscus meringue. A children’s menu and a weekday business lunch are also available. For those who prefer to dine at home, the restaurant offers a takeaway selection of its dishes.
