A Savoyard Homecoming

Since 2016, Carla and Sylvain Bailly have run Le Bistrot on rue du Théâtre in central Chambéry. The restaurant sits in a building with history, but the story here is the return of a local chef who trained in some of France’s most demanding kitchens.

Sylvain Bailly grew up in the Savoyard foothills. After earning his professional diploma at Le Chalet du Lac on Lake Aiguebelette, he joined Alain Ducasse’s brigade at the three-Michelin-starred Plaza Athénée in Paris. He then moved south to work with Benoit Witz at L’Abbaye de la Celle (one star) in Provence, where he absorbed a philosophy of cooking rooted in quality, seasonal produce. That Mediterranean influence deepened during a stint at Le Louis XV Alain Ducasse in Monaco, also three stars.

After seven years inside the Ducasse universe, Bailly ran the kitchens of the legendary Hôtel Richemond in Geneva. But Savoie called him back. He took over Le Bistrot and began cooking the way he had learned: precise, ingredient-driven, and tied to the rhythms of the market.

The Restaurant Today

Le Bistrot is a classic French bistro in feel – air-conditioned, with outdoor seating in good weather, and a space that can be privatised for groups of 20 to 50. The kitchen turns out dishes that reflect Bailly’s journey: Mediterranean brightness meets Savoyard generosity. The menu changes with the seasons, and the cooking is clean, direct, and confident.

The restaurant earned a Michelin Recommended distinction for 2026, a recognition that aligns with Bailly’s track record. It is a place where technique serves flavour, and where the chef’s years in haute cuisine are expressed in everyday bistro terms – without pretension.

Practical Notes

Le Bistrot is open for lunch Tuesday through Saturday, and for dinner Tuesday, Thursday, Friday, and Saturday. Wednesday lunch only. The dining room is wheelchair accessible (though the toilets are not). Pets are welcome. Payment by card, cash, meal vouchers, cheque, bank transfer, and American Express.

Le Bistrot is one of two addresses run by the Baillys; the other is Restaurant l’Éphémère in Le Bourget du Lac. But the original – the one that brought Sylvain Bailly back to his roots – remains this warm, unshowy room on rue du Théâtre.
