The story
Since 2019, Pinson has welcomed guests to a warm, unpretentious space on Place Monge in Chambéry. The restaurant is the project of Maud and Adrien Trouilloud, who together create an atmosphere that feels both convivial and refined.
Chef Adrien Trouilloud brings serious credentials to this Savoyard address. Before opening Pinson, he earned a Michelin star in 2014 at Rech, the Alain Ducasse seafood restaurant in Paris’s 17th arrondissement, and later ran the kitchens at the one-starred Maison Lasserre in the 8th. At Pinson, he channels that experience into a modern cuisine that is colorful and generous, rooted in the flavors of the Mediterranean.
Maud, who previously worked in luxury retail, handles the front of house with a natural warmth that sets the tone for the entire meal. The result is a dining experience that feels both accomplished and relaxed – a place where technique serves pleasure rather than spectacle.
The kitchen’s modern cuisine is evident in dishes like thinly marinated amberjack with vinegar, or a stuffed zucchini with saffron rice, cucumber and feta. The cooking is bright, seasonal, and driven by produce. A terrace opens when the weather cooperates, offering a sunny extension of the dining room.
Pinson’s quality has been recognized by the Michelin guide, which awarded it a Recommended rating. It’s a fitting nod to a restaurant where a chef who has cooked at the highest level now cooks exactly what he wants, in a city he clearly loves.
