The story
In the Marne Valley, at the foot of the vineyards, Christine and Franck Arnaud welcome guests to Le Moulin Babet. Housed in a former 19th-century mill, the restaurant has been reimagined by architect Thierry Bonne. Stone, stainless steel, and wood blend harmoniously across two levels, while the terrace and summer lounge overlook the Surmelin river. Le Moulin Babet holds the title of Maître Restaurateur, a French certification that guarantees every dish on the menu is made in-house from fresh, locally sourced ingredients. The menu changes with the seasons, but recent offerings include a tuna tartare with red onion, chives, and lime; steamed haddock with a virgin sauce and fine potato purée; and roast veal with devil sauce and ratatouille vegetables. Desserts feature creations like a banana-kiwi tart with banana sorbet and a nougat glacé with candied citrus and Armagnac. The cuisine here is a direct expression of the chef’s artisan savoir-faire.
