The story
In Châteaubriant, La Citadelle is the work of Chef Maxime Leloup, who describes his cooking as a meeting of tradition and creativity. The restaurant calls itself bistronomique, built on house-made preparations, fresh produce, and traditional French techniques. The dining room and terrace offer an elegant setting, and the space can be privatised for private events.
The kitchen works with the seasons, offering an à la carte, a three-course Menu Citadelle, a lunch menu, and a children’s menu. The style is modern French, with dishes that show precision and clear flavours. Among the offerings are homemade gravlax of salmon with dill, pink berries, and a sharpened Isigny cream; tarama with truffle oil, pistachio, and piquillo chutney; and pressed duck confit with foie gras. A cheese plateau from Maison Beillevaire is also available.
La Citadelle’s quality has been recognised by the Michelin guide, which lists it as a Recommended restaurant. For those looking for modern cuisine in the Loire-Atlantique region, it is a reliable and welcoming choice.
