Perched atop the medieval Château de Couffour, overlooking the sweeping countryside of the Cantal, Restaurant Serge Vieira is a place of quiet ambition. Its two Michelin stars – and a green star for sustainability – speak to a kitchen that balances technical precision with deep respect for the land. The dining room, with its glass walls, oxidized steel, and lava stone, frames the Aubrac plateau like a living painting. Here, simplicity and elegance coexist without pretense.

The man behind the stoves

Serge Vieira was born in Clermont-Ferrand in 1977, the son of Portuguese immigrants. A competition win at age 20 set him on a path through some of France’s most revered kitchens – Marc Meneau’s L’Espérance, Régis Marcon’s Auberge des Cimes – before he claimed the Bocuse d’Or in 2005 at just 27. That victory, achieved with guidance from a team of master chefs, cemented his reputation. In 2010, he and his wife Marie-Aude opened their own restaurant in the Château de Couffour, a return to his native Auvergne. Michelin awarded a first star that year, a second in 2012. Marie-Aude, a trained sommelier and hospitality professional, oversees the dining room with quiet grace. Together, they have built an experience that feels both personal and polished.

The culinary experience

The menus at Serge Vieira change every three weeks, reflecting seasonal availability and the chef’s inspirations. The “Menu S” (for Serge) offers two dishes, cheese, and dessert; the “Menu M” (for Marie-Aude) expands to four courses. Each begins with crackers and appetizers, then a cheese platter, and ends with petits fours. Wine pairing is available for both. The cuisine is grounded in French technique but light, precise, and ingredient-led – a style the chef describes as “rich in emotion,” built on simplicity, nature, and authenticity.
