The story
At L'Océanic in Chinon, chef Patrick Descoubes practises what he calls "une cuisine classique réinventée" – classic cooking turned on its head for an original finish. A millefeuille between land and sea, a "big macaron": his creations are personal, playful, and built from carefully selected products. The Michelin Recommended award recognizes this thoughtful, unpretentious approach.
"Il n’y a pas de bonne cuisine si au départ elle n’est pas faite par amitié," Descoubes writes, quoting Paul Bocuse. That friendship, that desire to touch the person you serve, drives everything. The seasons guide the menu, which changes as his own inspiration shifts. Yet the principles remain steady: fine cooking without pretension, deep respect for ingredients, and a commitment to genuine hospitality. Every guest should enjoy not just the plate, but the whole moment of being there.
The seafood focus is clear from the start: Caviar d’Aquitaine Osciètre with vodka, a céviche of royal daurade with pink berries and yuzu zest, or nine or twelve Gillardeau oysters. The dishes move between tradition and surprise. Tagliatelles of cuttlefish "carbonara" style with guanciale and caviar. Half lobster roasted in iodized butter. A turbot fillet with andouille de Guéméné.
Meat eaters are not forgotten – a French beef fillet with green pepper sauce from Madagascar, or a Thai-style hand-cut beef tartare. Cheese comes from local producers and MOF Hervé Mons. Desserts range from Chartreuse crème brûlée to a Grand-Marnier soufflé, or a tarte Tatin-style apple with buckwheat shortbread.
The dining room has been renovated, creating a setting that feels both refined and welcoming. A lively lunch menu at 22€ (Tuesday to Saturday) offers a plat, dessert, or cheese. The 32€ menu brings entrée, plat, and dessert – a chance to taste the kitchen's range without overcommitting. A children's menu is also available, and the restaurant offers outdoor seating, wheelchair access, and takeaway. Vegetarian options exist on the carte.
The chef speaks of his work with humility and conviction. "La cuisine ne peut être bonne que si l’on a envie de toucher celui à qui on la sert." At L'Océanic, that intention is felt in every dish.
