The story
In a modern, dynamic setting just steps from Clermont-Ferrand’s city center, L’Ostal offers a deeply personal vision of French gastronomy. Chef Quentin Brunet describes his restaurant as “anchored in its territory, living, demanding, and sincere.” The result is a dining experience that earned a Michelin star for its high-quality cooking, built on a philosophy of respect for the land and its seasons.
L’Ostal’s kitchen is defined by close, privileged relationships with producers from the Massif Central and, when the call of the sea is undeniable, from Brittany. The approach is strictly locavore and environmentally respectful, attentive to micro-seasons. Nothing is fixed: the product guides the gesture, and nature sets the tempo. Every raw ingredient is fully valued in a sustainable, responsible approach.
There is no fixed menu at L’Ostal. Instead, guests are invited to a “carte blanche” tasting experience, described as a sensory, gourmet walk where each step is a surprise. The restaurant offers tasting menus in several courses, with options for lunch (4, 7, or 9 services) and dinner (7 or 9 services). A recent menu showcased the kitchen’s creativity and local focus, with dishes like a Cantal cheese preparation with yuzu kosho and candied cherry, langoustine with horseradish and seaweed, and a main course of seasonal meat with asparagus, grapefruit, and hazelnut. A selection of regional cheeses is available as a supplement.
L’Ostal is an invitation to trust the chef, to let go, and to be surprised by the flavors of the Auvergne.
