Sept à Huître in Clermont-Ferrand transforms a small spot on Place du Mazet into a reliable destination for regional seafood. Former oyster farmer Romain Le Jéhan left the Brittany coast to bring that same maritime rhythm to the Auvergne region. He applies his hands-on background to sourcing and preparing each order, treating the kitchen more like an extension of the tide pools he once worked. The coastal kitchen centers on straightforward preparations that let the ingredients speak.
