The story
On the quay of Bourg-Charente, just outside Cognac, La Ribaudière has built a reputation for modern cuisine that is both rooted in its terroir and constantly evolving. Chef Thierry Verrat, at the helm for over three decades, describes himself as a perpetual mover. He is joined by his son Julien, and together they run a kitchen that prizes the fragile balance of flavours and the purity of ingredients.
“I seek to be in perpetual motion,” Verrat says. “Deeply anchored in a terroir of which I want to be the ambassador, I want to daily highlight its riches through my recipes.”
That commitment earned the restaurant a Michelin star, a recognition of the high-quality cooking and the precise, respectful treatment of local produce. The restaurant itself offers several distinct spaces: a grand salon, a smaller private salon, a bar, and a large terrace overlooking the river. There is also La Table du Fleuve, a more casual bistro-chic option on the same site.
Dishes visible in the restaurant’s gallery include an egg with truffle, a tartare of scallops with nettle condiment, pigeon with truffle from their own truffière, and a chocolate-cognac dessert. The cheese trolley features aged cheeses and local goat cheeses from the region, accompanied by Lily’s jellies. The cuisine is resolutely modern, with an emphasis on the best of the Charentais terroir.
La Ribaudière is closed Sunday evening, Monday, and all day Tuesday.
