The story
At the heart of the Hôtel Chais Monnet & Spa, within a historic building and beneath century-old foudres (large oak vats), Les Foudres has held its Michelin star since 2021. The restaurant is a tribute to the men and women who cultivate the local terroir, honoring their traditions and ancestral savoir-faire. Like locks along the Charente River, each course opens a window onto the intangible heritage of regional gastronomy.
Chef Mathis Debize, at the helm of Les Foudres, brings a career that spans Michelin-starred kitchens and travels to Indonesia. His ambition is to perpetuate an authentic cuisine, inspired by his journeys and a deep respect for local ingredients. Alongside Chef Alexandre Mornet, Debize crafts a symphony of flavors that balances tradition with innovation. The goal is a sensory voyage, making each meal a memorable adventure.
Les Foudres is the only Michelin-starred restaurant in Cognac, offering a destination where refinement, creativity, and authenticity converge. The modern cuisine highlights regional producers, with each dish a pause for discovery. The wine list, curated by an expert sommelier, is designed to complement the food perfectly. Open for dinner from Wednesday to Sunday, an elegant dress code is required. The space also hosts private events for up to 100 guests in its former cooperage setting, blending history with a warm, elegant atmosphere.
