The story
On the Place des Barrys in Gassin, Bello Visto looks out over the Gulf of Saint‑Tropez. Sylvain and Laurence run this restaurant‑hotel as a personal affair: Sylvain in the kitchen, Laurence greeting guests and ensuring their comfort. The setting is calm – dine on the terrace under the shade of hackberry trees or inside in a chic, cosy atmosphere. Both spaces share the same unhurried warmth.
The restaurant earned a Michelin Recommended distinction for 2026, a nod to Sylvain’s honest, flavour‑driven cooking.
Sylvain describes his cuisine as “good and beautiful Mediterranean cuisine,” built on fresh, local produce. The menu follows the seasons and lets the ingredients lead. Among the dishes that appear are stewed small rock octopus with Espelette pepper and organic spelt, potato gnocchi with truffles, rocket and Parmesan, locally caught fish roasted in the oven, and a classic hot Grand Marnier soufflé.
The kitchen is straightforward but precise – rooted in the terroir of the Var, with a creativity that brings emotion to the table without fuss.
Bello Visto is also a small hotel of seven rooms, and the restaurant serves breakfast through dinner daily. The wine list is interesting, and there is a free electric shuttle for guests parking in the village. It is a place where the view, the cooking and the welcome all pull in the same direction – simple, generous, and worth the detour.
