The story
À l'Échevin is the gastronomic restaurant inside Hôtel Le Maréchal, a historic 1565 manor in the heart of Colmar’s Petite Venise. The Bomo family has run the house for over fifty years, and the restaurant reflects that same long-standing commitment to hospitality. The dining room and terrace overlook the canal, offering a calm setting for a meal that balances tradition with invention.
The kitchen focuses on Modern Cuisine, described as creative and recognized gastronomy. The chef works with classic French techniques and local terroir, reinterpreting regional dishes with a contemporary eye. The restaurant serves lunch and dinner, closed Tuesday and Wednesday. Before or after your meal, the hotel’s Le Baron bar opens at 4 p.m., offering cocktails designed by their mixologist and a selection of spirits.
