The story
At the edge of an Alsatian winemaking village, Amsel in Colmar operates as a modern French bistro built around serious wine stewardship. Three former hospitality professionals converted a historic hotel to create this space. Romain Delorme, Aurélie Fayolle, and Rémi Ségura designed the layout to encourage relaxed conversation while highlighting regional vintages. Their approach earned a spot on the Le Fooding list for 2026.
Japanese chef Ken Katsumi brings his training from Troisgros in Tokyo to this Alsatian kitchen. He works alongside the founding team until October, shaping a menu that respects local ingredients while refining bistro classics. Guests often order the wild boar terrine brushed with gewürztraminer or the teriyaki glazed chicken thigh paired with smooth mashed potatoes. The cooking stays grounded in technique rather than chasing trends.
Herringbone parquet floors and unbleached muslin curtains define the dining room. Custom wooden tables sit beside a brass trolley holding small bottles of Alsatian brandy. Families find plenty of space near the garden terrace during warmer months. The kitchen opens its doors every Friday for communal flammekueche evenings, drawing regulars into a quieter corner of the region.
