The story
In the heart of Colmar, within the park of the Champ de Mars, Kathia and Jean-Yves Schillinger welcome guests to JY'S, a restaurant that holds two Michelin stars for excellent cooking. The dining room, designed by Olivier Gagnère, is a contemporary space—an elegant, modern setting that matches the precision of the kitchen.
Chef Benoît David leads the brigade, crafting menus that change with the seasons. The cuisine is grounded in French technique but reaches globally, as seen in dishes like Arctic char confit in oil on warm beet tartar, or a roll of crabmeat in thin strips of celtuce topped with jalapeno sauce. A business lunch offers three courses, while the full evening experience unfolds over six or ten courses, each one a careful composition of texture and flavour.
The wine list is considered and interesting, with optional pairings designed to match each menu. The kitchen also offers a dedicated vegetarian menu, though vegan cuisine is not prepared.
