On the village square of Boulleret, facing the rolling hills and vineyards of Sancerrois, Maison Medard has been an essential address since 2014. Chef Julien Medard and his wife Delphine run this Michelin one-star restaurant with a clear philosophy: respect for nature and the living world guides every decision.
Born in the Sologne region, the son of a cook and grandson of a farmer, Julien Medard climbed the ranks of French haute cuisine, working as executive chef under mentor Dominique Radmacher before opening his own establishment. His style of Modern Cuisine is driven by rigour, precision, and a deep connection to the land. “Being close to nature and doing things with simplicity and authenticity: this is how I cook,” he says.
The restaurant’s Michelin star, awarded in 2021, reflects this commitment. It is a recognition earned by celebrating the Berry terroir with honesty and finesse, rather than flashy technique. The kitchen’s seasonal, ingredient-focused dishes are matched by a carefully curated wine list that highlights the great appellations of the Centre-Loire region—Sancerre, Pouilly, Menetou-Salon, and others. Delphine Medard leads the front-of-house with a warm, discreet professionalism, ensuring that the experience from kitchen to table is seamless.
Maison Medard also holds a Gault & Millau “Trophée Terroir d’Exception,” a nod to the team’s collective work with local producers. The restaurant is part of the Maîtres Cuisiniers de France and the Collège Culinaire de France, and follows a sustainable tourism charter. A meal here is an authentic immersion in the wines and landscapes of Sancerre.
