The story
At the Hôtel Annapurna in Courchevel 1850, Alpage is a restaurant that reveals itself only at nightfall. It is designed as a privileged moment of sharing with Chef Jean-Rémi Caillon and his team, set within a calm, soothing interior open to the surrounding nature. The green of the forest is dressed in fairy lights and a striking full-moon chandelier, creating a dining experience close to the elements and the stars. Granite from Mont-Blanc, oak from Albertville, ceramics by Anne Marmottan, and a soundscape by Le Couturier du Son combine to form a sensory, refined, and timeless parenthesis.
Chef Jean-Rémi Caillon, originally from Roanne and trained in great French cuisine, brings a philosophy of respect for seasons and raw flavours. His cooking at Alpage is a faithful reading of his universe, where precision and sensoriality find balance between the mineral, vegetable, and animal. Each five- or seven-course menu tells a story that evolves with the seasons: fresh herbs and wild flowers, Courchevel pepper, fish from alpine lakes, mushrooms, game, and truffle. These creations emerge from a constant dialogue between inspiration and the living world, in a sincere and responsible approach.
Alpage holds a Michelin star for high-quality cooking, a testament to its precision and consistency. In 2024, the restaurant also earned the 3-macaron Écotable label, reflecting its daily commitment to short supply chains, biodiversity, and reducing its environmental footprint. This modern cuisine is rooted in the work of market gardeners, fishermen, and artisans who nurture the mountain with their know-how. "My job is to highlight those who cultivate, pick, fish, and raise these rare products, and to tell their story through each dish," says Chef Caillon.
Open for dinner only, from Wednesday to Sunday, Alpage offers an intimate theatre where every gesture, every material, and every silence has meaning. The "Pralong 1904" discovery menu for young gourmets (under 30) is an ascent that begins at 1904 metres, inviting guests to discover the alpine world through a tasting experience at 190 € (excluding drinks). For all guests, the signature dinner is a progression of subtle flavours, a meeting with the mountain's finest produce, and a moment of pure gastronomic elegance at one of Courchevel's most acclaimed tables.
