The story
Since 1963, the white chalet of Le Chabichou has stood at the heart of Courchevel 1850, in the vast Domaine des 3 Vallées. What began as a nine-room Savoyard inn run by Michel and Maryse Rochedy grew into an essential stop for skiers and gourmands alike. The restaurant earned its first Michelin star in 1979 – a first for the village – and a second star soon followed.
In 1987, Stéphane Buron joined the kitchen. He would go on to win the prestigious Premier Prix Taittinger in 2002 and become a Meilleur Ouvrier de France in 2004. Today, his name is inseparable from the restaurant. Buron’s cooking is described as “gastronomique d’exception, tout en délicatesse et en émotion” – exceptional, delicate, and emotional. His modern cuisine draws on the finest Alpine and French ingredients, presented with precision and a quiet confidence that keeps the focus on flavour.
The dining room is refined and luminous, with soft light and clean lines that echo the snowy landscapes outside. Yet the atmosphere remains warm and familial – a quality the Rochedy family cultivated over five decades and that the current owners, the Lavorel Hotels group, have preserved. The restaurant is part of a five-star hotel, but the spirit is one of genuine welcome. Children are as at home here as couples seeking a romantic evening.
Le Chabichou by Stéphane Buron holds two Michelin stars, a testament to the consistency and artistry of the kitchen. It is a place where the grandeur of the Alps meets the intimacy of a great meal – and where the next chapter of a storied history continues to unfold.
