The story
Mathilde Traullé and Pierre-Emmanuel Courtois lead the kitchen after years of professional experience across Europe and North America. They settled in Morgat to build a straightforward bistro centered on fresh, local and seasonal produce. Their workflow strips away sprawling lists in favor of a living chalkboard that updates each morning, keeping the bistro menu tight. Stainless steel surfaces in the prep area reflect a preference for speed, hygiene, and clear plating standards.
The chalkboard dictates exactly three starters, three mains, and three desserts for every service. Coastal catches and regional harvests determine which proteins and vegetables reach the pass. Recent rotations have highlighted line-caught pollack served raw with light citrus notes, alongside roasted monkfish resting in a savory seaweed broth. Vegetable dishes receive equal attention, often featuring layered preparations like kohlrabi presented in grated, roasted, and candied forms.
Wooden shelves lining the dining room hold a carefully rotated selection of bottles. The staff coordinates glass pours to match the saltiness of shellfish or the earthiness of root vegetables. Service remains brisk yet unhurried during the Friday through Monday lunch and dinner windows. This steady cadence allows guests to focus entirely on the food while navigating the compact floor plan.
