The story
Perched on the edge of Lac des Dronières with the Montagne du Salève as a backdrop, L'Arborescence in Cruseilles is both a boutique hotel and a restaurant where modern cuisine meets mountain hospitality. The house, formerly known as "l'Ancolie," has been reimagined with a warm, Scandinavian-inspired interior – natural wood, soft tones, and a cocooning atmosphere that invites guests to slow down.
Chefs Jennifer and Loïc Deletraz met at the famed Clos des Sens in Annecy. Their path took them through prestigious kitchens – Maryse & Michel Trama, Martine & Laurent Petit, Fabien Lefebvre, Lionel Giraud, Vincent Lugrin, Les Tresoms, and Christian Constant – before they opened their first restaurant in Cercier in July 2022. In August 2024, they replanted their roots at Cruseilles, breathing new life into the old address. The tree ("arbre") is their symbol: a testament to resilience and the fruit of shared work. "Bienvenue chez nous," they say.
The kitchen follows the rhythm of the seasons and the generosity of the local market. Everything is made in-house, with an emphasis on producers who matter to the team. The result is modern cuisine that feels grounded – plates that travel through the local landscape without pretension. The Michelin Guide has recognised this approach, awarding L'Arborescence a Recommended distinction, a nod to the precision and sincerity of the cooking.
Beyond the dining room, L'Arborescence offers cooking classes with the chef – a morning spent learning to craft an entrée, main, and dessert on a chosen theme, with the option to enjoy the results on site or take them home. The restaurant also hosts private events, from receptions to celebrations, all set against the lake and mountain panorama. Whether for lunch (Wednesday to Sunday) or dinner (Wednesday to Saturday), the experience is one of understated elegance and genuine welcome.
