The story
In the small village of Cuisiat, at the heart of the Ain region, chef Nicolas Morelle runs Voyages des Sens. After working alongside several great chefs, including Michel Guérard, he settled here to cook the food he loves. The result is a restaurant that feels both personal and precise.
The menu is built around a surprise format the chef calls "escales" – a progression of courses that begins with five amuse-bouches representing the five countries of the Ain. Guests then choose how many escales they wish to continue with, from three to six. The dishes change with the seasons, drawing on local produce from the Revermont, Bresse, Jura and Bugey, while also incorporating ingredients from further afield. The chef describes his approach as a way to "magnify" the best of the region's products.
The cooking is modern and gastronomic, but the atmosphere remains warm and unpretentious. The restaurant has been recognised with a Michelin Bib Gourmand, an award that highlights good quality, good value cooking. This recognition sits alongside the chef's title of Maître Restaurateur (awarded in 2018) and the restaurant's membership of the Collège Culinaire de France, both of which underline a commitment to fresh, seasonal ingredients and short supply chains.
Wine pairings are available, as is a non-alcoholic option. For those visiting at lunchtime on weekdays, a simpler three-course "Menu Découverte" is offered, based on the chef's daily inspiration and market arrivals. A children's menu is also available.
