The story
Complices is the realisation of a vision shared by Alain Bagnères, who dreamed of a place for epicurean moments in the heart of Dax. His path crossed that of Sophie and Hugo, two chefs with more than eleven years of experience in the kitchens of great Parisian restaurants. Their passion for gastronomy and their travels through over fifteen countries have shaped their cooking, which now finds its home at this address on cours Gallieni.
The restaurant’s approach is built around “menus à l’aveugle” – blind tasting menus that invite trust and curiosity. Sophie and Hugo work with fresh, seasonal produce sourced from local suppliers, often delivered the same morning. Each dish is a reflection of the product and the moment, never repeated. The lunch menu (two or three courses, 28–32 €) is served Wednesday to Friday, while the Discovery menu (four services, 59 €) and Immersion menu (six services, 72 €) offer a deeper exploration of their modern cuisine. Wine pairings are available for both.
The dining room blends stone and wood to create a warm, intimate atmosphere. Capacity is intentionally limited, allowing for close interaction with guests. A verdant patio provides outdoor seating, a quiet retreat in the centre of Dax. This commitment to quality and proximity has earned the restaurant a Michelin Recommended distinction, recognising its consistent, thoughtful cooking.
