The story
At the Moulin de Cambelong, chefs Émilie and Thomas work side by side, creating a modern cuisine that reflects both of their sensibilities. Their restaurant, simply named E&T, is housed in a beautifully restored mill set along the river in Conques-en-Rouergue, near Decazeville. The stone walls, the sound of the water, and the surrounding greenery set a tone of quiet elegance. The Michelin guide has recognized their achievement with one star, a testament to the precision and harmony of their four-handed cooking.
The couple describes their approach as "unique and combined"—a gastronomic menu that balances simplicity with sophistication. The restaurant's pastry is led by Claudia Del Frate, an Italian chef whose craft was inspired by her grandmother's precision and love for baking. She returned to the team in November 2023, bringing her refined desserts back to the E&T experience.
