The story
Since opening on rue Odebert, DZ'envies has brought a distinct voice to Dijon's dining scene. Chef David Zuddas leads a brigade of fifteen passionate cooks and servers who share a vision of food that is both militant and honest: careful sourcing from local, responsible producers, technical skill, and prices that keep fine dining accessible. The restaurant earned a Michelin Recommended distinction – a natural recognition of its consistent, creative approach to Modern Cuisine.
By day, DZ'envies operates as a "cantine chic" – a stylish lunch spot for regulars. The midday menu gives pride of place to market-fresh, seasonal products, served in a ballet of efficient service. A daily formula at a smart price, available Tuesday through Saturday, offers a choice from the carte, always with that unexpected detail that twists the plate. Lunch service runs Tuesday to Friday 12:00–14:00, and Saturday 12:00–14:30.
When night falls, the restaurant shifts into "bistro gastro" mode, inviting guests to take their time. The cuisine becomes more technically refined, with sharper flavour pairings. A three-course "DZ'envies" formula changes every two weeks, promising new harmonies each visit. A carefully curated wine list highlights Burgundies alongside French favourites and personal selections from the team. Dinner is served Tuesday to Saturday 19:00–22:00.
Behind the stove, chef de cuisine Phillipe Adam works alongside Zuddas, while Alexandra Gay oversees the dining room. Together, they champion a Modern Cuisine that fuses Burgundy's rich heritage with influences from elsewhere – never imitating, always reinventing. The result is a continuous play of harmonies that elevates the product, treated with the precision of an artisan. As the team puts it: good appetite.
