A “vinostronomique” table in the heart of Dijon

At La Table des Climats, the dining experience is built around one idea: the perfect dialogue between plate and glass. Chef Alexandre Clochet-Rousselet describes himself as a “Bourguignon de cœur,” and his cooking is a sincere, generous celebration of the region. The restaurant sits inside the Cité de la Gastronomie et du Vin, a fitting home for a concept that marries modern cuisine with the 1,247 Climats of Burgundy – a UNESCO World Heritage designation that the restaurant’s name and philosophy honour.

The approach, which the team calls “vinostronomie,” is an immersive exploration of terroir through both food and wine. The wine list is vast: more than 800 references spanning Burgundy and beyond, selected by head sommelier Arthur Paquelier. Guests can taste grands crus and small domaines alike, with a generous selection by the glass thanks to Enomatic technology. It’s a place where each dish is composed with a specific wine in mind.

Chef Alexandre Clochet-Rousselet

A native of Burgundy, Chef Clochet-Rousselet trained in several Michelin-starred kitchens – including Le Pressoir d’Argent (Gordon Ramsay, Bordeaux), La Table de Pavie (Saint-Émilion), and Le Relais Bernard Loiseau. He was named “Jeune Espoir de l’année 2019” by Le Chef magazine. His motto: “Le goût avant le visuel” – taste before visuals. At La Table des Climats, he works with 100% local suppliers and seasonal products. His signature pôchouse, a revisited tribute to the Burgundy terroir, exemplifies his credo.

The setting and the menus

The dining room is set within a vaulted space that once belonged to the old general hospital of Dijon. Large windows look onto the kitchen, where guests can watch the brigade at work. In warmer months, the terrace opens onto the parvis de l’Unesco, with views of the restored chapel façade. The atmosphere is convivial and lively, shaped by the attentive service of Arthur Paquelier and his team.

Menus change with the seasons and the chef’s inspiration. The lunchtime “En 3 Services” (€39) offers a concise introduction, while the “Héritage” (€75) and “Horizon” (€95) menus unfold over several courses. Typical dishes include Arctic char with caraway and kiwi, confit beef shank with smoked celery and mustard bran, or a pithivier of pike-perch with local oyster mushrooms and a Burgundy matelote sauce. A cheese trolley and a citrus dessert with Corsican lemon, meringue, and madeleine sauce often round off the meal. Wine pairings are available at several levels, from a Discovery pairing to a Prestige or Exception selection.

Michelin recognition

La Table des Climats has earned a place in the Michelin guide, recognised for its modern cuisine and its singular wine-focused identity.
