Deep in the heart of Burgundy's wine country, at 6 rue du Chambertin in Gevrey-Chambertin, La Table d'Hôtes run by Lucie and Thomas Collomb is the sort of place that quietly earns its reputation. The couple – Thomas in the kitchen, Lucie in the dining room – have built a restaurant where everything revolves around the ingredients, the season, and a clear-eyed respect for the land.

The cooking here is modern cuisine, but it never feels like a laboratory. It's precise, confident, and grounded in what Burgundy does best: vegetables from organic farms, fish from clean waters, and meats from local breeders like the fermier pork from Auvergne. Thomas Collomb changes the menu every fifteen days, which means you're almost always eating at the peak of the season. A recent lunch menu started with snails, peas, and horseradish; moved on to Arctic char with asparagus and vin jaune; and ended with goat kid, cherries, and cabbage. Desserts lean into classic French pastry: raspberry with honey and jasmine, a Pink Lady apple creation, or the simpler sweet pleasures.

The kitchen's philosophy is clear – "working with local producers engaged like them in respecting nature and our environment" – and it's backed by a Michelin star that recognises the high quality cooking on the plate. The dining room is calm and refined, with outdoor seating for the milder months and a wine list that leans heavily on Gevrey Premier Cru les Corbeaux, sourced from two of the region's finest domaines.

Lunch is served Wednesday evening and Thursday through Saturday for both lunch and dinner. The tasting menu at lunch is 68 euros (excluding cheese), dinner 110 euros. Wine pairings are available in three or seven glasses. Reservations are essential, and the restaurant's own website makes that easy.
