Since opening in 2016, L'Essentiel has become a cornerstone of Dijon’s dining scene, recognised by the Michelin Guide for its clear, precise and sincere cuisine. In 2023, Chef Richard Bernigaud and his team moved the restaurant to a characterful bourgeois manor on Avenue Victor Hugo, just a few steps from the original address. The new setting—a carefully restored house full of charm—marks a confident evolution while holding fast to the identity that built the restaurant’s reputation.

Bernigaud learned his craft in some of France’s most demanding kitchens: Maison Lameloise in Chagny, Guy Savoy in Paris, Stéphane Derbord in Burgundy, then Joël Robuchon in Monaco and Didier Anies at the Grand Hôtel du Cap-Ferrat. When he opened his own place in Dijon, he distilled those experiences into something personal. The menu, built around seasonal produce from carefully chosen local producers, evolves constantly. There is no jargon here—the cooking is inventive but legible, letting ingredients speak.

The restaurant is a family affair. Fanny Bernigaud joined in 2022 and now anchors the front-of-house, bringing warmth and structure to the service. The dining room is overseen by Pascal, the head waiter, with Sébastien at his side. In the kitchen, long-time collaborator Jean-Baptiste works alongside the chef, supported by a young, passionate team that includes apprentices—a sign of the house’s commitment to passing on skills. This is modern cuisine at its most grounded: honest, polished and deeply of its Burgundy home.
