The story
Ô Dissay is the gastronomic restaurant of Château de Dissay, a 15th-century classified historic monument set in the Poitevin countryside near Poitiers. The kitchen focuses on modern cuisine built around the interplay of land and sea – "terre et mer" – with subtle, refined flavours. The restaurant offers several menus to suit different occasions: a Gastronomic menu served Wednesday through Sunday evening and Saturday and Sunday lunch; a Bistronomic menu available Monday to Friday lunch and Monday and Tuesday evening; and the Menu du Clain, offered at lunch on Monday, Tuesday, and midday Wednesday through Friday. Each changes with the seasons, drawing on fresh, market-driven ingredients.

The Easter 2026 menu, for example, features a brioche-style pâté de Pâques with seasonal herbs, line-caught sea bass with green asparagus and morel sauce in vin jaune, roasted saddle of lamb with wild garlic and first peas, and a strawberry dessert with meringue, pink berry, and tarragon. The New Year's Eve menu includes foie gras marbled with cocoa, scallop carpaccio with butternut and yuzu, confit cod with seaweed stuffing and shellfish, and roast capon with truffle and chestnut cream.
