The story
Grain de Sel sits on the outskirts of Dole, in a quiet 19th-century building. The restaurant promises a friendly and pleasant moment, with an atmosphere that lets the food speak. Chef Aurélien Moutarlier leads the kitchen, crafting original, seasonal modern cuisine that changes with the availability of produce and his own inspiration. His aim is to share his gastronomic expertise with every guest.
This commitment to quality and value earned Grain de Sel a Michelin Bib Gourmand, an award that highlights good quality cooking at a reasonable price. It’s a fitting acknowledgment of a kitchen that prioritises local and seasonal products, homemade dishes, and a wide range of wines.
The menu is built around several formulas. The “Grain de Sel Express” (€32) offers a choice of starter/main or main/dessert at lunchtime, except weekends and public holidays. For a fuller experience, the “Fleur de Sel” (€53) includes starter, main, cheese and dessert. The “Gourmet Salt” (€75) lets the whole table discover the chef’s current culinary creations. A children’s menu is also available at €14.
A sample of recent dishes gives a sense of the style: semi-cooked duck foie gras in grapefruit crumble with strawberry and shrimp relish, or white asparagus from the Saône Valley with orange and trout roe. For mains, white trout in a crust with green asparagus and morels, and a trilogy of lamb with artichokes and liquorice-infused jus. Desserts include a strawberry creation with madeleine biscuit and yuzu ganache, or a chocolate-peanut brownie with mousse and opaline.
All dishes are homemade, prepared on-site from scratch, and the team can inform you of the origin of products and any allergens.
