The story
Since December 2010, Iida-Ya has brought a corner of Japan to the historic centre of Dole, in the Jura region of Bourgogne-Franche-Comté. Chef Junichi Iida, born in Tokyo, trained in Michelin-starred kitchens across France before settling in this elegant town house. The dining room is deliberately zen and uncluttered – a calm setting that lets the food speak.
The Michelin Bib Gourmand recognises Iida-Ya for “good quality, good value cooking”, a fitting nod to a restaurant that balances refinement with generosity. Chef Iida selects local Franche-Comté produce and treats it with the precision and respect he learned in France, while never losing the soul of Japanese gastronomy.
Iida-Ya’s Japanese cuisine is not a strict transplant but a dialogue between two traditions. The chef weaves the rigour of Japanese technique – clean flavours, precise knife work, seasonal awareness – with the richness of French ingredients and classical know-how. The result is a menu that feels both audacious and balanced: plates that are recognisably Japanese yet rooted in the Jura terroir.
The restaurant offers lunch and dinner, with a wine list that complements the subtle interplay of flavours. For those who want to explore further, the chef also runs cooking classes where he shares the secrets of traditional Japanese cooking and the workings of a gastronomic kitchen.
Iida-Ya extends beyond the dining room. The team provides a catering service for private and professional events in and around Dole, and there is a takeaway and home-delivery option for those who want to enjoy the same refined dishes at home. Opposite the restaurant, Chef Iida opened Iida-Shoten in 2017, a Japanese épicerie selling tableware, drinks, and gourmet products – an invitation to take a piece of Japan home.
