The story
In the village of Parcey, eight kilometres from Dole, a stone house on the RN 5 holds a restaurant that has earned a Michelin Recommendation for 2026. Chef Bruno Pellegrini is the man in the kitchen, cooking a modernised version of traditional French cuisine that follows the seasons and responds to what his guests ask for.
The setting is a "maison de village en pierre de tailles" – a cut-stone village house. The ground-floor dining room is contemporary, its walls hung with works by a local painter. Upstairs, a private salon overlooking the garden seats about ten people, and a separate room on the upper floor can host family or business meals for around 25. When the weather cooperates, the real draw is the inner courtyard garden – a terrace set among flowers and trees, photographed by FOXAEP STUDIO DIJON.
The photo gallery gives a sense of the kitchen's range. Lobe de foie gras, saumon mariné, escargots poêlés, Saint-Jacques poêlées. Main courses like entrecôte de veau, rouelle de pintade, filet de dorade, jambonnette de volaille. Desserts include crumble de fruits, pavlova, vacherin, and a carré chocolat. The dishes are classic French, prepared with care and presented without fuss.
Chef Pellegrini also shares his knowledge of regional specialities – the restaurant's news section features a recipe for cancoillotte, the local melted cheese. The Jura location puts guests close to Dole and the Pasteur museum, the vineyards and cellars of Arbois, the UNESCO-listed Saline Royale of Arc-et-Senans, and the Comté cheese cellars of Poligny, 30 minutes away.
The restaurant is closed Sunday evening, all day Monday and Tuesday, plus one Sunday per month. It takes a summer break from 22 June to 7 July and again from 20 to 28 July 2026.
