The story
La Table des Échevins is the gastronomic restaurant of Maison Prévost, housed in a 17th-century building in central Douai. The dining room sets the stage: no tablecloths, leather chairs, raw materials – a deliberately sober backdrop. The meal itself unfolds like a play, from the first bite to the last mignardise, each course an act in a harmonious whole. This distinctive vision has earned the restaurant a recommendation from the Michelin guide.
Chef Jérôme Prévost’s cooking is rooted in respect – for the ingredient, the producer, and the land. He favours slow cooking: confit, beeswax, broths – techniques that extract depth without aggression. The modern cuisine is seasonal and local, built on direct relationships with farmers, fishermen, and artisans. Meats come from Lesage and Vassant, fish from Martin in Boulogne, vegetables from nearby growers. Bread, ice creams, and sorbets are made in-house. Nothing is wasted: trimmings become pesto, rinsing water irrigates the garden.
The restaurant occupies a former manor house in Vieux Douai, with period woodwork, exposed stone, and a courtyard where climbing vines and aromatic herbs grow. The atmosphere is both refined and welcoming – a true family house, run by Jérôme Prévost and his wife with a young, passionate team. Here, modern cuisine is practised with sincerity, skill, and a deep sense of place.
