The story
Ô Flaveurs is the domain of chef Jérôme Mamet, who has held a Michelin star since 2008. His cooking is described as “inventive” and “sincere,” with deep French roots. There are no set dishes here – instead, Mamet proposes surprise menus built around the day’s best arrivals from local producers. The result is a seasonal, spontaneous expression of modern cuisine that changes with the harvest and the market.
The restaurant occupies part of the Château de Chilly, a castle whose centuries-old stone walls are softened by contemporary furnishings and a flower-filled terrace. It is a place where old and new coexist without pretension: the ancient feel of the masonry grounds the experience, while the bright, clean lines of the interior keep the focus on the plate. Lunch is served in a single service on Sundays, and a weekday lunch menu is offered at €88.
Mamet is not a native of Haute-Savoie, but he speaks of the region with the devotion of a convert. An avid paraglider and outdoor enthusiast, he draws energy from the mountains and lakes that surround him. “Each flight, each walk in nature reinforces my desire to highlight what this generous land has to offer,” he writes. That connection to place is the backbone of his modern cuisine – every plate is a fragment of the landscape he has adopted and cherishes.
His wife curates the wine pairings with care, ensuring that each glass complements the spontaneity of the menu. The atmosphere is one of quiet conviviality: the dining room is small, the service attentive, and the pace unhurried. Whether you come for a weekday lunch or a full evening surprise menu, the goal is the same: to let the ingredients speak, and to let the season guide the meal. This is a Michelin-starred restaurant that feels more like a personal invitation than a formal stage.
