The story
In the heart of Beuvron-en-Auge, consistently named one of France's most beautiful villages, Le Pavé d'Auge occupies the village's ancient market halls. The dining room retains its original character – exposed timber, a traditional fireplace – and the atmosphere is one of authentic Norman hospitality.
Chef Adrien Haye leads the kitchen, offering a menu that evolves constantly. The cooking is rooted in the local terroir, but the presentation and technique are firmly modern. The result is a cuisine that feels both of its place and of its moment, a balance that has earned the restaurant a Michelin recommendation.
The menu is built around seasonal produce from the Pays d'Auge, and the wine list is thoughtfully curated to match. Whether you sit inside, surrounded by the history of the halles, or outside on the terrace in good weather, the experience is unhurried and direct.
Le Pavé d'Auge is open for lunch and dinner, Wednesday through Sunday. It is a place where the setting and the food work in quiet harmony – a genuine expression of modern cuisine in one of Normandy's most picturesque corners.
