The story
When Justine and Maxime set out to name their restaurant, they wanted something that captured their bond and their approach to gastronomy. They found it in "Symbiose" – from the Greek sýn (together) and bíos (to live). The definition of symbiosis – an intimate and sustainable relationship between different organisms – felt like a perfect fit. "Every sign of love, of the impossibility of working one without the other, and the compatibility, all together were perfectly matching, creating an harmony, almost a perfect alchemy," their website explains. From that idea, Symbiose was born, and the adventure began.
At the stove, chef Maxime practices what the restaurant calls "creativity constantly awake." His modern cuisine is multifaceted, always adapted to the products of the moment. Guests describe it as "refined and light," with "quality ingredients super well cooked." The menu changes with the seasons, driven by what is fresh and local. There are no fixed signatures listed online, but the philosophy is clear: a cuisine that respects the ingredient and surprises the palate.
