The story
In the heart of Espelette, red shutters against a white façade mark the entrance to Choko Ona — "the good corner" in Basque. Here, Flora and Clément run a restaurant that feels both like a home and a destination. Their modern cuisine, rooted in the landscapes of the Basque Country, has earned them a Michelin star.
Flora leads the dining room with warmth, while Clément builds each menu around what the region offers that day. Nearly an hour each morning goes to calls with producers, listening to what is ready — a vegetable, a fish, a season’s brief peak. The result is a menu that shifts constantly, tracing a line from the mountains to the coast.
Two menus structure the experience. At lunch, the Menu Mondarrain offers a shorter path through Clément’s cooking. For a deeper exploration, La Promenade du Renard unfolds in five services, with an optional wine pairing. Both showcase local ingredients from sustainable, small-scale farms.
The dining room reflects the same care. Solid oak tables come from a local workshop, each with a drawer for cutlery and a hook for bags. Ceramics by Emo Création, leather menus from Atelier Arano, and a fresco by Mash add texture. Outside, the garden — designed by Les Dehors Chics — mixes wild grasses, edible flowers, and fruit trees.
Choko Ona is open for lunch and dinner Tuesday, Thursday, Friday, and Saturday. It is a place where the seasons set the pace, and the team of eleven works with precision and genuine hospitality.
