A Franco-Mexican Union on the Opal Coast

At Le Mezquité in Le Touquet-Paris-Plage, chef Julien Szyndler and his wife Laura Flores Szyndler have created a restaurant that is both instinctive and audacious. The couple, who met at the kitchens of Château de Montreuil and later worked together at La Grenouillère, opened their own place in 2020. Their cuisine is a personal, creative fusion of Northern French terroir and the vibrant spices of Mexico — a chimera, as they describe it, that “reunites the mind and nourishes the soul.”

The dining room, designed by the couple themselves, evokes a chic 1920s atmosphere with a Mexican twist. Tabletops resemble puzzle pieces inspired by pyramid stonework, set on Parisian bistro legs, while Mexican pottery and onyx tableware complete the setting. Outside, a terrace offers a more casual setting for warm-weather meals.

A Menu of Bold Contrasts

The food at Le Mezquité is built on surprise and balance. Sweet notes appear in savoury dishes, salt invades desserts, and local products meet distant spices. Signature dishes include snail in a crust with Mexican flavours, smoked lamb shoulder using wood from the Mezquité tree, octopus with chorizo, and a family recipe for mole poblano that uses over twenty ingredients. Desserts are equally inventive: a perfect avocado ice cream topped with a chocolate-currant coulis, strawberry ketchup, nutmeg, and green asparagus coulis.

The restaurant offers a “Menu Renaissances” — a six-course gastronomic tasting menu available at dinner, showcasing the full range of this fusion cuisine. Laura also curates the wine list, selecting local and international bottles alongside authentic Mexican spirits, many of which are little known in Europe.

Recognition from Michelin and Beyond

Le Mezquité’s bold approach has not gone unnoticed. It holds a Michelin Recommended distinction, a recognition that speaks to the careful execution of its unexpected flavour combinations. The restaurant has also been featured in Le Monde, MasterChef magazine, and the Fooding guide, which praised the chef for “making the sun of Mexico shine” using meticulously sourced ingredients fused with local produce. In 2021, the restaurant won the TheFork Awards Public Prize, voted by diners.

For anyone seeking a truly distinctive dining experience in the Hauts-de-France, Le Mezquité offers a culinary journey that respects both the land and the traditions of Mexico — without ever feeling like a gimmick.
