The dining room, designed by Bruno Borrione, is a study in understated elegance – a palette of black and ochre, punctuated by the animal-inspired artworks of Paul Jouve that recall the glamour of the 1930s. On warmer evenings, the experience extends to a sunlit terrace overlooking the hotel’s garden, with a peaceful view of the Canche lighthouse.
The menu is built around gastronomic journeys of five or nine services, highlighting the finest local produce. Dishes such as glazed sweetbreads, green asparagus with seaweed butter, and Gariguette strawberries showcase the richness of the region. A carefully curated wine and champagne list, selected by the sommelier, is designed to complement each course with subtle precision.
