The story
Perched on a hillside in the Fayençois hinterland, Le Castellaras is a stone mas that immediately feels like a true part of Provence. Its shaded terrace overlooks the village, offering a setting that is both natural and refined. Here, the kitchen belongs to Chef Quentin, a cook deeply attached to the local land. His inspiration changes daily, driven by what he finds at the morning market. The result is a cuisine that is always of the season, built from fresh, local ingredients.
The Michelin Recommended distinction recognises this honest, creative approach. Quentin’s cooking is rooted in the traditions of Provence, yet his creativity is boundless. He offers several ways to experience his work: the Menu Plaisir, a weekday lunch built around the day’s market finds; the Menu Gourmandise, a four-service selection with choices; and the Menu Découverte, a six-service blind tasting that puts your trust entirely in the chef. An optional wine pairing of five 10cl glasses, selected by Hermance, is available for the Découverte menu. The kitchen is attentive to dietary needs, offering vegetarian options and dishes that are very low in gluten.
Dining at Le Castellaras is about more than the plate. The interior balances a modern decor with authentic warmth, often centred around a majestic fireplace. In warmer months, the terrace and part of the park are equipped with a responsible, wood-based anti-mosquito system (BioBelt) for guest comfort. The restaurant also hosts Les Musicales du Castellaras, a series of relaxed concerts that accompany dinner, and offers cooking classes with Chef Quentin for those who dream of learning alongside him.
